Chicken and Rice Salad

There is always something you can do to your salad… add rice and chicken.

Chicken: Put some olive oil on the pan. Place the sliced Organic Breast to sautee. Season it with Lemon Pepper. Then when chicken is almost done, add sliced Onions and Bell Pepper (orange one). Caramelize the onions with the Orange bell Pepper and add two table spoons of Warshirshirsershie sauce. When done, pour on top of Baby spinach and add some rice.  Feeds 2-4 people.

Then you can add some balsamic sauce… And enjoy! 😀

Carne a la Bejin

This is my version of Bejin Beef… My Guatemala-ness style…LOL

I had some left over rice someone put in my freezer not to long ago… and Had some Carne asada there too.

So After heating up the rice … I…

Caramelized some onions, added some dried up red chilly peppers and some panda express sauce (they sell it now) and Tada!!! food.  Super easy to make and super tasty. Enjoy.

So its that time of the year…where your  music stations will drive you crazy with Christmas Music! Don’t you love it??? I do!  Personally I have My Pandora on to my Diana Krall Christmas tunes on my Verizon Blackberry Storm 2… love it! Its my mini computer.   FYI (click pic. to buy on itunes)

TODAY I was listening to LTTP : Last Train To Paris by: Sean Combs, Puffy, Puff Daddy, P. Diddy, Diddy. Lets Just say I was upbeat, stylish, empowered, I reminisced of my love and was filled with hip movement.

I love this sweater! I cannot say how many times I wear it. And their basic shirts are awesome. 
I use to be a Gap Girl… back in the day I use to be a Jean Specialist… Yes… I can target your size when I see you.  I use to work in the Gap store #117 (no longer there, but they have a baby Gap) at the Westside Pavillion.  
I was my first job ever.  I also helped open the store at The Grove LA…Work I tell ya. I give people in retail props because They have to burn the oil at night to make it look pretty. Any who… I love their clothes.

Indian Chicken Curry

Ingredients

  • 3 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons curry powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1/2 teaspoon grated fresh ginger root
  • 1/2 teaspoon white sugar
  • salt to taste
  • 2 skinless, boneless chicken breast halves – cut into bite-size pieces
  • 1 tablespoon tomato paste
  • 1 cup plain yogurt
  • 3/4 cup coconut milk
  • 1/2 lemon, juiced
  • 1/2 teaspoon cayenne pepper

Directions

  1. Heat olive oil in a skillet over medium heat. Saute onion until lightly browned. Stir in garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar and salt. Continue stirring for 2 minutes. Add chicken pieces, tomato paste, yogurt, and coconut milk. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes.
  2. Remove bay leaf, and stir in lemon juice and cayenne pepper. Simmer 5 more minutes.

Mole w/ godiva coco powder

 

Jes’ made Mexica Mole.

Ingredients

  • 2 teaspoons vegetable oil
  • A cup finely chopped onion
  • 3 tablespoon unsweetened Godiva cocoa powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried cilantro
  • Dried minced garlic
  • 1 can condensed tomato soup
  • Diced green chile peppers

Heat the oil in a medium saucepan over medium heat, and cook the onion until tender. Mix in Godiva cocoa powder, cumin, cilantro, and garlic. Stir in the tomato soup and green chile peppers. Bring to a boil, reduce heat to low, cover, and simmer 10 minutes. Transfer to a gravy boat or pour directly over food to serve.
